Caramelized Onion & Mushrooms Spaghetti with Katsu Chicken Topping

We recently came across this delicious looking picture of spaghetti with caramelized mushrooms the other day and decided to give it a try with a little twist. Why spaghetti you ask? Because we LOVE spaghetti!

So, the things you need are as follow:

  1. Spaghetti/Pasta
  2. Mushrooms
  3. Garlic
  4. Butter
  5. Onion
  6. Cooking Cream
  7. Chicken/Streaky beef slice
  8. Katsu Chicken for topping


1. Pasta/Spaghetti

Boil the pasta in water, add in a bit of salt and oil so the pasta won’t stick together. Tips to know if your spaghetti is ready, take a spaghetto (yes, an individual strand of spaghetti) and throw it to your wall, if it stick, it is ready. Take out the spaghetti and keep the pasta water for use later.

2. Caramelized Onion & Mushrooms

For the mushrooms, you guys are free to use any mushrooms you like, for example, button mushroom, portobello mushroom, shiitake mushroom, beech mushroom just to name a few. Try mixing the mushrooms for better taste.

For the onion caramelization, chop the onion finely. Get the pan hot, add a bit of butter. Turn to low-medium heat so you don’t burn the butter. Add the finely chopped onion and stir it regularly until it turns golden brown.

When the onion turns brown, add the finely chopped mushrooms, always add the mushroom after the onion turns brown because the mushroom cook faster.

3. Mixing everything

When the aroma rises from the mix of onion and mushroom, add in the garlic and season it to taste (add salt and pepper).

And then, add in your pasta, stir it for a bit and immediately add in the pasta water from boiling the pasta. Stir again and add it a bit of cooking cream. Add in some herbs and cheese (you can try to mix a bit of parmesan, cheddar or mozarella, not too much though). Stir to cook.

Avoid cooking for too long or else it gets dry.

4. Katsu Chicken for Topping

For the spaghetti topping, we used the First Pride Crispy Chicken Katsu.

We are so loving this Crispy Chicken Katsu. It is just so crispy and goes well as a topping. Well, deep fry this baby and we are done.

5. Plating

So now, get a plate and start plating your spaghetti and top it with the Katsu Chicken. Put some shredded Parmesan and fresh herbs on top.
