If anyone’s ever asked me whats my favourite local malay food? Best believe I would tell you its Lontong and Rendang. Ye ye, Nasi lemak too. But obv I would prefer Lontong <3
Mak O’ Mak’s Lontong
I am not a picky eater but I have certain standard on my food preferences cause I guess I was surrounded with all good chefs in my life. My abah, arwah Mama and even my in law’s are a good cook. Not to mention, all my Melaka and Johor family is also very good at cooking. Alhamdulillah.
So, the other day, during 2nd week of Raya, I was craving for Lontong and decided to make it on my own. I love Lontong that has a bit thicker gravy than the usual lontong. Usually, yes Kuah lodeh kena banyak air yes I know.. but I feel the taste would be quite bland if its way too watery. (This is my preference, so dont judge me if you like it differently). Oh btw, I love love Mak O’ Mak’s lontong. They have the best lontong ever. That’s it. You guys should try it and tell me I’m not exaggerating. Here is my Lontong (Kuah Lodeh) Recipe, My Kuah is quite different since I adapted it from my masak lemak version but in extended version hehehehe
- Onion / Bawang Merah 5,6 pcs
- Garlic / Bawang Putih 2,3 pcs
- Kunyit hidup 2,3 pcs
- Cili Padi (I love spicy food so I will put as many as I want)
- Ikan Bilis / Udang kering *Secret ingredient*
- Coconut Milk
- Lemongrass / Serai 1/2 pcs
Below are all optional Veges/Protein that I love to put in my kuah Lodeh;
- Kacang panjang
- Fish cakes
So, Firstly I will put kunyit hidup,onion, garlic, cili padi, ikan bilis, lil bit of waterh into the blender and blend it well. Next, I will pour in some oil into the pan and heat up my chicken with Worcestershire sauce + pepper + salt (This is additional if you decided to put chicken). After few mins, you will see the chicken is producing juices and then only you pour in your bahan bahan tumis earlier. Put in some serai as well. Hit the lemongrass and toss it in! Then, let it cook for a while. Dont forget to cover the pan with lid. Season it with salt and some cukup rasa. Next, put in the veges of your choice and let it cook as well (Put the hard to cook veges first preferably) Roughly after 5-10 mins, pour in the coconut milk and let it boil for a while and boleh tutup api dah lepas tu. Then, you are done.
Usually I will cook the Nasi impit first on the other side of stove. Once its cooked fully, let it cool for few hours then you are ready to munch!
